Peach, Mango & Roasted Corn Salsa with Maple Peach Fruit Sauce
Ingredients:
For the Dressing:
- 3 Tbsp White Meadows Farms Maple Peach Fruit Sauce
- 2 Tbsp Freshly Squeezed Lime Juice
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Apple Cider Vinegar
- ½ Tsp Salt
- ¼ Tsp Pepper
For the Salsa:
- Kernels from 2 cobs of fresh corn
- 1 Red Mango, peeled, pitted, and diced
- 2 Peaches, peeled, pitted, and diced
- 1 Small Red Onion, diced
- ½ Red Bell Pepper, diced
- 1-2 Jalapeños, seeds removed, diced
- 2-3 Tbsp Fresh Cilantro, chopped
Method:
Prepare the Dressing:
- In a bowl, combine all dressing ingredients. Whisk thoroughly until well mixed.
- Set aside.
Char the Corn:
- In a frying pan over high heat, add the freshly cut corn kernels.
- Squeeze fresh lime juice over the corn and season with a pinch of salt and pepper.
- Stir frequently until the corn becomes fragrant and starts to turn a deep brown colour.
- Remove from heat and allow the corn to cool.
Combine the Salsa:
- In a large bowl, mix the diced mango, peaches, red onion, bell pepper, and jalapeños.
- Add the cooled corn and freshly chopped cilantro.
- Pour the prepared dressing over the salsa and toss to coat.
