As we find ourselves already in the middle of July, we thought it would be fun to highlight some interesting ways to incorporate maple into your summer menu! If youโ€™ve been following our blog, you may remember our Production Assistant Aarika, who curated the 2022 Holiday Cocktail Series with our lineup of maple-infused fruit sauces. Not Your Grandmaโ€™s Potato Salad

If you thought you were about to scan through a recipe with creamy mayo and hard-boiled eggs โ€“ think again. Do not underestimate the versatility of this reinvented potluck fave ๐Ÿ‘

Why Maple Mustard?

Instead of using traditional mayonnaise dressing, this potato salad highlights the tangy zip of one of our original maple concoctions: Gourmet Maple Mustard. Made in the WMF Kitchen since the early 2000’s, our 100% pure maple syrup imparts a gentle, natural sweetness that complements the mustard’s inherent sharpness. Normally, maple mustard is found on sausages and charcuterie boards, but there are many other ways to incorporate this maple favourite that you may not have thought aboutโ€ฆ

Here are a few ideas:

  • Dipping sauce for chicken tenders
  • Glaze for roasted vegetables
  • Devilled eggs
  • Grilled cheese
  • Dip for soft pretzels

๐Ÿคซ The Secret Ingredient: Caper Brine (or Pickles!)

Alongside maple mustard, this zesty vinaigrette combines white wine vinegar, extra virgin olive oil, and a splash of caper brine. Have you ever used caper brine outside of the jar before? The natural umami adds a savory element that provides satisfying depth to the salad dressing. But if you donโ€™t have a jar of capers on hand โ€” grab the pickles! For all the dill pickle lovers out there, you can swap both the capers and the caper brine in this recipe for chopped dill pickles and their brine. Pickles have a crunch factor which can really elevate a potato salad. Donโ€™t forget that pop of green colour and unmistakable tangy, salty flavour that contrasts beautifully with the other fresh ingredients.

Choosing the Right Potatoes

When coming up with the trial recipe, fingerling potatoes were chosen for their characteristic earthy and nutty flavour. However, in the spirit of #supportinglocal, you should definitely try using new potatoes from your local farmerโ€™s market. Small potatoes with the skin on make for the perfect texture alongside other ingredients. One of the best parts of this salad is that it is served slightly warm, for an incredible burst of flavor and mouthfeel. Selecting the right potatoes is of utmost importance!

Onions and Herbs

While youโ€™re at the farmerโ€™s market, be sure to pick up a vibrant red onion and a few herbs to complete the recipe. You can usually find local onions and fresh herbs available all year round!

๐Ÿง… Pro Onion Tip: If you find onions to be too spicy for your palate, chop and soak them in a bowl of cold water for about 10 minutes before adding them to the salad. This helps to mute the strong onion flavours and allows for a more balanced taste.

Nothing says fresh summer salad like using fresh herbs. Parsley and dill were chosen for this recipe, but any that you have on hand will do. Rosemary, chives, mint, or tarragon would make for excellent substitutes.

New Potato Salad with Maple Mustard Dressing

Serves 4

Ingredients

For the Dressing:

  • ยผ cup White Meadows Farms Maple Mustard
  • 2 tbsp White Wine Vinegar
  • 1 tbsp Caper Brine
  • 4 tsp Extra Virgin Olive Oil
  • Black Pepper, to taste

For the Salad:

  • 1.5 lbs New Potatoes (or Fingerlings) 
  • 1 tbsp Salt
  • ยผ cup Red Onion, chopped
  • 2 tbsp Capers
  • 1 tbsp Fresh Dill, stems removed, chopped
  • 1 tbsp Fresh Parsley, stems removed, chopped

Method

  1. Rinse potatoes, halve or quarter them so that all potatoes are the same size. Place in a pot of cool water with 1 tbsp of salt. Boil until fork tender, about 15-20 minutes.
  2. In the meantime, combine all dressing ingredients in a small bowl and whisk together until emulsified, about 2 minutes. Set aside.
  3. Drain potatoes and place into a mixing bowl. Add red onion, capers, dill, parsley, and dressing. Mix thoroughly so that the dressing evenly coats the salad. 
  4. Let marinade for about 10 minutes and serve.
